Deli Macaroni Salad Recipe

Ingredients
1 bag or box elbow macaroni (approximately 1 lb.)
1 green bell pepper
1 sweet onion (large)
1 kosher dill pickle (large)
6 hard boiled eggs
1/2 tsp celery salt (to taste)
Mayonnaise

Method:
Boil elbow macaroni, drain when done and put in a large bowl.
Add the following: cut up and diced onion, green pepper, pickle, eggs, and mix together with as much mayonnaise as desired.
Add celery salt as you mix the salad. Add some sliced hard boiled eggs to top of salad if desired. Chill and serve.

Macaroni and Beet Salad Recipe

Ingredients
1 package shell macaroni (7-oz.), cooked and drained
1 package frozen green peas (10-oz.), cooked and drained
1/4 cup diced celery
1/4 cup chopped onion
2 cans diced beets (16-oz. ea), drained
1 cup mayonnaise or salad dressing
Salt and pepper to taste

Method:
In a large bowl, combine all ingredients. Cover and refrigerate for several hours or overnight.

Macaroni with Beef Recipe

Ingredients:
1 pound elbow macaroni
1 pound ground beef
1/2 cup chopped onion
1 large can crushed (or stewed) tomatoes
1 can tomato sauce
1 tablespoon sugar
Salt and pepper, to taste

Optional:
Green peppers, chopped
Mushrooms

Method:
1. Cook elbow macaroni as directed on package. Drain.
2. In a large skillet, over medium heat, cook meat, breaking up as it cooks, until browned.
3. Sauté onions and add to meat. Add remaining ingredients and continue to cook until all ingredients are combined and hot.
4. Put elbows into a large serving bowl and pour meat/tomato mixture over them.
5. Mix well and serve with crusty Italian bread.

Baked Macaroni and Cheese Recipe

Ingredients:
2-1/2 cups uncooked macaroni

Sauce:
4 tablespoons butter
4 tablespoons flour
1 tsp. salt
1 tsp. sugar
1/2 pound (250g) process cheese, cubed
2/3 cup sour cream or plain yogurt
1-1/3 cup cottage cheese

Topping:
2 cups shredded cheddar cheese (the older the better)
1-1/2 cups fine soft bread crumbs
3 tablespoons butter

Method:
Cook macaroni in boiling, salted water.
For the sauce, make a roux of the butter, flour, salt and sugar. Add sour cream and cottage cheese and cook until cottage cheese sort of melts. Add the cubed process cheese.
Add sauce to the macaroni, mix well and place in greased jellyroll pan or 9″x13″ pan. Sprinkle with bread crumbs, then cheese. Dot with butter.
Bake at 350°F for 45 to 50 minutes (longer for the 9″x13″ pan).
